Our Honey

At Galtee Honey Farm, each jar of honey is a reflection of the land and the flowers that surround our hives. Our Native Irish Black Honey Bees forage freely across biodiverse landscapes—from hedgerows and old woodlands to wildflower meadows and upland heather.

They gather nectar from a rich mix of plants including blackberry blossom, dandelion, hawthorn, white clover, horse chestnut, sycamore, heather, ivy, and countless smaller wildflowers.

This wonderful variety is what gives our honey its depth, character, and complexity of flavour. No two seasons are ever quite the same—each harvest is shaped by the natural rhythm of Irish flora.

We take great care in how we manage our bees. Their welfare always comes first. Our hives are placed in healthy, natural environments where bees can thrive without stress. We never overwork our colonies, and we never expose them to chemical treatments.

Every drop of honey we produce comes from our own bees. We do not buy in honey from other sources, and we never feed sugar to our bees while they are producing honey. What you get is 100% raw, natural Irish honey—untouched, unblended, and full of all the good stuff that nature intended.

Our honey is:

  • unpasteurised – preserving natural enzymes, antioxidants and beneficial properties
  • additive-free – no sugar, syrups or artificial anything
  • single-source – fully traceable back to our apiaries
  • award-winning – proudly recognised at the Irish Food Awards and Irish Artisan Food Awards

Honey has long been valued for its natural health benefits. It’s a natural antiseptic and contains flavonoids, enzymes, trace pollens and antioxidants that can support digestion, soothe sore throats, and even help with hayfever symptoms. (Note: Honey is not suitable for children under 12 months.)

If your honey turns cloudy or becomes solid over time—don’t worry. That’s called crystallisation, and it’s a sign that your honey is pure and unprocessed. To return it to a runny state, simply warm the jar gently (never above 42°C). Ivy honey, however, is meant to be enjoyed in its naturally crystallised form.

Our honey is more than sweet—it tells a story of place. As our bees move through the seasons, they collect nectar from:

This diversity of flora adds to the complexity of flavour.

Sustainable honey

Native Irish Honey Bees, Sustainable Honey

We are proud custodians of Ireland’s Apis mellifera mellifera—the Irish Black Honey Bee. It is a strain of the Dark European Honey Bee. Native honey bees are better adapted to our climate and forage more efficiently in wild conditions.

We are against the importation of honey bees into Ireland, as importations threaten the existence of the Native Irish Honey Bee through hybridisation.
